Castellfollit del Boix beans
The farmers from Castellfollit del Boix sow these beans year after year in chalk-rich loamy soil in a mountainous area. In time, the beans have adapted to the characteristics of the soil and the microclimate of Castellfollit del Boix to the point where they are now difficult to produce outside the municipality.
The Institute of Agricultural Research and Technology (IRTA) has studied the morphological and technological characteristics of this bean and has concluded that, as a seed and a plant, it has its own characteristics and that neither the origin, nor the variety, can be determined. That makes them simply Castellfollit del Boix beans.
The beans have their own qualities, defining them and differentiating them from other beans. They have a fine texture, without being floury or doughy. They are not hairy, either, and their skin is thin and bright.
